Head Chef – Steve Rawicki (Right)

Restaurant Chef - Mihai Sukosd (Left)

Our Head Chef, Steve Rawicki, joined William’s in 2015 and brings with him over forty years' catering experience. He has worked as a Head Chef in restaurants across the country from Newquay, Cornwall to Llandudno, Wales - nearly always on the coastline reflecting his passion and extensive knowledge of fish and seafood.

Mihai joined the team in 2016 bringing with him a wealth of experience in the restaurant industry, most recently as Head Chef for over 16 years at The Foston's Ash near Birdlip. If you're lucky, you'll hear him singing up the stairs!

“At William’s, it is all about the fresh fish – simply prepared, using seasonal ingredients. The day’s catch arrives with us every morning from Cornish day boats, demanding a new menu and new inspiration. I will often go for fresh, new flavours and try to create dishes where the ingredients are allowed to stand out and speak for themselves”.

Owners – Ed and Helen Playne

Local family, Ed and Helen Playne, took over the business when William Beeston retired in March 2014.

Ed’s family have lived in the Nailsworth / Minchinhampton valley for several generations and he was delighted to have the opportunity to take over such an iconic local business. Passionate about all things foodie, especially fresh fish, expect to see Ed in his favourite place behind the fish slab on Saturdays!

Having previously worked for hotels & restaurants in London, Helen was thrilled to take on this new challenge and is involved in all aspects of the business on a day-to-day basis.
