Head Chef – Robin Oakley

Our Head Chef, Robin Oakley, joined William’s in 2013, having previously worked alongside Michael Bedford at both the Trouble House Inn and The Chef’s Table in Tetbury. During Robin’s seven years at The Trouble House, the restaurant was awarded its first Michelin Star.

“At William’s, it is all about the fresh fish – simply prepared, using seasonal ingredients. The day’s catch arrives with us every morning from Cornish day boats, demanding a new menu and new inspiration. I will often go for fresh bold, flavours and try to create dishes where the ingredients are allowed to stand out and speak for themselves”.

Local family, Ed and Helen Playne, took over the business when William Beeston retired in March 2014.

Ed’s family have lived in the Nailsworth / Minchinhampton valley for several generations and he was delighted to have the opportunity to take over such an iconic local business. Passionate about all things foodie, especially fresh fish, expect to see Ed in his favourite place behind the fish slab on Saturdays!

Having previously worked for hotels & restaurants in London, Helen was thrilled to take on this new challenge and is involved in all aspects of the business on a day-to-day basis.
